I don't have a lot of sugar in it because A. I don't like my kids to eat a lot of sugar and B. The berries are sweet
Berry Coffee Cake Recipe
4 cups of flour
1/2 cup of sugar (or you can use another dry sweetener, we use swerve.)
5 tsp of baking powder
6 tsp melted butter
2 beaten eggs
4 cups of berries
2 tsp of vanilla extract
1 1/2 cups of milk (I used Almond)
Topping – Combine 1/2 cup sugar, 1/3 cup flour, cinnamon, and butter. Sprinkle over cake batter.
Easy Directions
Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish.
In a large bowl combine flour, sugar, and baking powder. Stir in butter, milk, vanilla and egg until smooth. Fold in raspberries. Pour into prepared pan. Sprinkle topping on top.
Bake in preheated oven 40- 50 minutes, until top is firm.
We love Coffee cakes at our house and think your recipe for a berry coffee cake is one that I want to make. I bet it tastes delicious!
