Grown-up Gourmet Grilled Cheese

Grilled cheese was always a go to as a child. It was a comfort food and I loved it so much, my family actually called me ‘Mandie Mouse'. Luckily my taste in cheese got better as I got older. Instead of unwrapping it, I buy good gourmet cheeses that I slice myself. Black Creek Cheese has become one of my favorite cheeses. They have a nice variety..

– Black Creek® Sharp Cheddar (Aged 9 months)

– Black Creek® Extra Sharp Cheddar (Aged 2 Years)

– Black Creek® Extra Sharp Cheddar (Aged 3 Years)

– Black Creek® Double Smoked Cheddar

– Black Creek® Cheddar Cheese with Parmesan Notes

– Black Creek® Cheddar Cheese with Gruyere Notes

They are perfect for a meat and cheese board, I love to pair them with wine but I also love to make one of my childhood favorites and turn it into an adult gourmet grilled cheese sandwich. I only use the best cheeses and it if perfect for a quick lunch, book club, or for grilling at your BBQ!

My favorite adult gourmet sandwich is my grilled cheese (Black Creek® Sharp Cheddar (Aged 9 months) and Black Creek® Extra Sharp White Cheddar (Aged 3 Years)- grilled onion, pesto, and gourmet white bread. I love a good fluffy bread to make grilled cheese with.

I bought the Black Creek Cheeses at Target but you check on their website to see where you can find them near you.

What you need for the grilled cheese…

Fluffy gourmet bread of choice

Pesto (I buy premade but you can make your own)

Sliced Onions

Black Creek Cheeses of your choice

How to make them….

I grilled the onions while I get everything else ready. I slather the pesto on the bread and slice the cheese and place on the sandwich. When the onions are finished I add to the bread, close and grill. You can grill inside or on the grill outside. I  wait a couple of minutes then flip and see if it is toasty and the cheese melts.

So easy to make and I always get compliments!
