Smoked Salmon and Spinach Salad with Avocado

My husband loves to fish and we it a lot. I mean at least a couple of times a week and even though we eat a lot of fresh fish we also add in store bought Salmon of some sort.  I get only buy wild caught Alaskan Salmon. No farm raised fish for us. My husband was a commercial fisherman for years and anything other than wild caught is a big no-no. We add in the Salmon even though we catch a lot of fish because it is so good for you and has all of the good fats your body needs.

I love to pair it with avocado because it has the healthy fats too. This salad is soooo good for your brain!  Speaking of Avocado…Erin makes an AMAZING Creamy Avocado Pasta Salad that you have to try!




INGREDIENTS:

1/2 lb fresh baby spinach
2 ripe avocados
1 tbsp lemon juice
3 tbsp olive oil
1 tbsp balsamic vinegar
Salt and freshly ground pepper
1/4 lb sliced smoked salmon
1 tsp finely chopped tarragon


PREPARATION:

Finely shred the spinach. Mix together olive oil, balsamic vinegar, tarragon, salt and pepper.
Halve avocados. Remove stones, peel and chop. Toss with lemon juice.
Cut smoked salmon into strips.
Toss together spinach and olive oil dressing. Gently fold in avocado and smoked salmon. Serve.
