Peppermint Patty Cake Mix Cookies
Peppermint patties are some of my favorite candies. I love the way the mint and chocolate mixes. Since we are studying Ireland and St. Paddy I decided it was time for a fun treat so I made Peppermint Patty Cake Mix Cookies. These are soooo easy since they are made with pre-made candies and a cake mix. They are perfect for a party or book club. They are quick and easy, just the way I like it.
What you need
Ingredients –
1 box of chocolate cake mix, any brand
2 eggs
1/2 C. vegetable oil
2 packages of York Peppermint Patty Minis (located near the checkout area)
St. Patty sprinkles
Directions –
#1. Preheat the oven to 350 degrees and line your baking sheet with
foil or parchment paper (easy clean up).
#2. In a medium bowl, combine the cake mix, eggs and vegetable oil.
#3. Use a tablespoon to scoop a small scoop of dough. Roll the dough
in your hand and then flatten a bit. Place one mini Peppermint Patty
on top. Scoop another small amount of dough and place it on top of the
peppermint patty, sandwiching it between the cookie dough. Gently roll
the dough between your hands and then roll in the St. Patty's
sprinkles (see photo).
#4. Bake 8-10 minutes.
*Makes approximately 24 Peppermint Patty Cake Mix Cookies.
