I usually have a large garden every year but this year time got away from me and it is such a huge undertaking that I just didn’t have the energy. Even though I didn’t have my garden I still cook with a lot of herbs. I recently found Pop and Cook and it is pretty amazing.
You literally pop it out of the pack and use it. It takes in the freezer until you are ready to use it so it won’t go bad. It was the perfect amount of flavor and so easy to use! You get it from Walmart in the freezer section.
There were so many things I could make! I cook with herbs a lot and use them with chicken, fish, pastas, and so much more so my options were limitless but I knew EXACTLY what I’d make…..Some people are addicted to sodas, others are addicted to pizza…I’m addicted to hummus. If I see some in the store I pick it up and it doesn’t matter if I already have some at home because I know that we’re going to eat it. I guess I could have worse habits, right?
Hummus is pretty easy to make but sometimes I buy it because of the different flavors. Recently I’d picked up some Jalapeno cilantro hummus and I wanted to see if I could copy it.
Jalapeno Cilantro Hummus
What you need
1 can garbanzo beans
1/2 jalapeno – (some people can use the entire thing – not me!)
1 tablespoon Tahini
1 clove of garlic
Salt to taste
How to make it
Drain the can of garbanzo beans and reserve the liquid. Dump everything into a blender along with a little bit of the reserved liquid. Blend and add more liquid if needed for the consistency you like. It only take a few minutes to make and is a great snack or on a wrap.
