I fell in love with butternut squash soup at Panera and started making it at home, and then I started growing butternut squash in the garden too! These butternut squash and sage pockets are like little fall empanadas: creamy squash, cream cheese, gouda and sage folded into flaky crescent dough. They were a huge hit with my family and make a perfect Thanksgiving appetizer.

Tips
- Save time: use 3 cups of pre-cut squash from the produce section.
- Fresh or dried sage: use 2 tablespoons fresh, chopped, or 2 teaspoons dried.
- Seal well by pressing the edges with a fork.
- Make ahead: make the filling a day early and assemble before baking.
