Lemon Garlic Vinaigrette

I love making my own salad dressings.  They usually come together in less than 5 minutes, and they taste so much better than the store bought kind.  Plus, then you know everything that is in them.  Have you ever turned the bottle over to actually look at the list of ingredients?  Lots of those things can be hard to pronounce, and I am pretty sure that isn’t a good thing!

This lemon garlic vinaigrette is perfect for the summer.  It is light, fresh, a little tart from the lemon and even a little creamy.  I use it on cold pasta salad, lettuce salads, and even as a marinade.  It stores perfectly in the fridge for up to a week, so I always make a big batch!
