Preheat the oven to 350°F and line baking sheets with parchment.

In a medium bowl, stir together the cake mix, eggs and oil until a soft dough forms.

Scoop a tablespoon of dough, flatten it in your palm and set a mini peppermint patty on top. Cover with another small scoop of dough and roll into a ball so the candy is sealed inside.

Roll each ball in sprinkles and place 2 inches apart on the sheets.

Bake 8 to 10 minutes, until the edges are set. Cool 5 minutes on the pan, then move to a wire rack.
