On nights when everyone’s running late, these fajita lettuce wraps save dinner. Grab a rotisserie chicken on the way home, sauté colorful peppers and onion, toss in the chicken with homemade fajita seasoning, and spoon it into crisp romaine leaves with a creamy cilantro-lime sauce. Prefer tortillas? They’re just as good in warm flour or corn tortillas.

Tips
- Make the sauce the night before so the flavors blend.
- Mix a big batch of seasoning and store it in a jar for tacos, fajitas and chili.
- Slice everything thin so the peppers cook quickly.
- Use tortillas if you’d rather have classic fajitas.
