Delicious and Easy Holiday Dish – Vegetarian Penne and Ricotta

“The Holidays”,  that time between Thanksgiving and New Years Day is a wonderful season for my family. My family has so many parties, events, and our own celebrations, it is a very busy time of year…. but we love it. My girls and I bake a lot for our friends and neighbors, we also take dishes to parties and get-togethers with our friends and families.

One of my favorite dishes to make and take is vegetarian penne and ricotta because it is so absolutely delicious and so easy to make. It is always a hit because I use the very best ingredients. For this recipe I used Barilla penne pasta and Galbani ricotta cheese which is smooth, creamy, rich texture and made in the traditional Italian style for a truly authentic taste.

I love to take healthy, delicious food to share with my friends and family…. and it is sooo easy to make. Pasta has kind of always been ‘our thing' in our family. Pasta helps me feel connected with people in my life. Eating pasta brings the people in your life – friends and family – together around the table. It’s one of the most appreciated foods around the world as something to be shared among loved ones.

I made this version vegetarian because then I can share it with all of my friends and family.

Ingredients
Jar Barilla Traditional Sauce
1/3 container Galbani Ricotta Cheese
1 box Barilla Penne Pasta
Mixed vegetables (I always have a lot of chopped up vegetables – you can use any kind… or even leave them out)
9×13 Dish

How to make it

This is seriously absolutely incredibly easy… and oh so good!

I cook the pasta then drain it. I saute the vegetables and sit them to the side. Then I put the jar of sauce and 1/3 container of ricotta cheese in a bowl and mix it then added half of the cooked pasta and the vegetables. After that I add the other half of the pasta into the baking dish then pour the sauce mix over it.I pat it down and sprinkle mozzarella cheese on top.
