Shrimp is a big hit at my house. My 8 year old can eat more of it than I can. I think we are in trouble when he is a teenager. He has expensive tastes. It is a good thing I can stretch the shrimp, but putting in a tortilla, and topping it with corn salsa.
These chile spiced shrimp are full of lots of flavor, but not a lot of heat. The sauce comes together quickly, and lasts forever in the fridge. Combined with the roasted corn salsa, it is the perfect summer dinner.
