Need some gluten-free, low-carb, or keto pumpkin pancakes? I've got you covered. These are easy to make and Oh, so, good!

Midmorning I decided I wanted to make some pancakes, I haven't had them in such a long time. I usually like eggs or some oatmeal with Collagen Peptides Protein Powder.

I intermittent fast so I don't eat until around 11. Regular pancakes often feel very heavy in my stomach, so I whipped up some low-carb keto pancakes.

These leaves are changing, there is a nice crisp breeze in the air, even in Florida. Why not be ‘fall festive', right? I also love PUMPKIN EVERYTHING, and without sugar is even best.

Since I've been cutting back on my sugar, maple syrup has a lot and I needed something to put on top of the keto pumpkin pancakes. I didn't have any sugar free syrup since these were so last minute. So I made a keto pumpkin whipped cream to put on top. It might sound fancy but it isn't, whipped cream is so easy to make!

I'm not on keto anymore because my hormones got wacky while following the diet. If you are over forty, check out The Hormone reset diet. Apparently, keto isn't the best for some women, but I did lose a lot off of it for a while until I got sick from it. Now I carb cycle and there are days I eat delicious foods like these Keto pumpkin pancakes.

I probably wouldn't eat these every day because of the fat content in them, but they are a great low carb option and perfect if you are on Keto.

Keto / Gluten-Free / low-carb Pumpkin Pancakes

Ingredients –
Batter –
2 oz cream cheese
4 eggs
3 tbsp of almond flour
1 pinch salt
1 tbspn pumpkin puree
Butter
Keto pumpkin whipped cream
1/2 cup heavy whipping cream
3 tbsp granuated stevia
1 tbpn pumpkin puree
Batter Directions-
Blend all of the ingredients together. The mixture will be thin, it thickens up a little but these aren't fluffy pancakes. Add butter to the pan, pour mixture and cook until brown then flip.
Whipped cream recipe.
Pour the heavy whipping cream into a bowl along with the stevia (or your preferred sugar substitute) and the pumpkin puree. Stir until it thickens.
