Make Your Own Chocolate Pudding
Have you ever had one of those days where you had to have something sweet? Yeah, me too but I rarely have ‘junk' in the house which is great because I'm doing great with my weight loss (and muscle gain) and being healthy but sometimes…. I have to have something.
I don't feel guilty with make your own chocolate pudding because I know exactly what is in it. There are no preservatives and I use only healthy foods when I make it.
We've been making our own homemade chocolate pudding for a while. It is really easy and inexpensive and I don't have to worry about all of the extra additives that are included in store bought chocolate pudding.
What you need
2/3 cup sugar or sugar substitute (I use Swerve, it is made from Stevia but without the bitter aftertaste)
1/4 cup HERSHEY'S Cocoa
3 heaping tablespoons cornstarch
1/4 teaspoon salt
2-1/4 cups organic milk
2 tablespoons butter
1 teaspoon vanilla extract
Whipped topping
Directions
1. Stir together sugar, cocoa, cornstarch and salt in medium saucepan; gradually stir in milk.
2. Cook over medium heat, stirring constantly, until mixture boils; boil and stir 1 minute. Remove from heat; stir in butter and vanilla. Pour into individual dessert dishes. To avoid a skin from forming on top, press plastic wrap directly onto surface; serve warm or refrigerate at least 2 hours. Garnish with whipped topping, if desired. 4 servings.
**Note** It will be a little runny at first because it needs to set up. I like to make these earlier in the day then have them for our dessert. You can also shred chocolate to put on top or add caramel.
