This time of the year we are on the go. We are baking, doing crafts, decorating, going to recitals.. you get the idea.
I'm always looking for something good I can feed the family and being easy is even better.
It allows us to enjoy the season even more and concentrate on making holiday memories instead of slaving in the kitchen.
I made a Turkey and Loaded Potato casserole.  I wasn't prepared for HOW EASY it was.
I never had Betty Crocker™ Casserole Potatoes before. They are actually REAL potatoes and they tasted GOOD!
Best part is the dish only took 25 mins.

What you need –
1 Package of Loaded Betty Crocker™ Casserole Potatoes 
1 cup of chopped Turkey
1 3/4 cup of water
3/4 cup of milk (I used Almond milk)
2 tbsp of butter

Heat your oven to 450F. Stir 1 packet of sauce mix into boiling water, milk, and butter.
Once it it mixed pour it into a 1 1/2 qt casserole dish then stir in 1 pouch of potatoes.

Add in turkey.
I used leftover turkey from earlier in the week. 
You can also throw in kale, bell peppers, or anything else your heart desires.

Put in the oven and bake uncovered for 25 minutes or until the top is golden brown. 
Stir before serving.

  1. I love making stuff like this 🙂 We used to do it a lot more before I discovered I had Celiac’s, so we don’t do packaged meals a lot anymore. My husband’s favorite was with hamburger and corn instead of the turkey. It’s also good for pot pie filling.

  2. I would get my potatoes at Fred Meyer 🙂 I was just thinking of having some plain old cheesy potatoes, but now that I’ve seen your recipe, I think I’d like to step it up and make this instead! YUM!! 🙂

  3. I would try the turkey loaded potato casserole because I have so much turkey left. I buy my potatoes at the military Commissary.

  4. I typically go to kroger or walmart depending on what I need. I don’t do anything fancy so I would keep the recipe simple. Just scalloped potatoes or cheesy potatoes.

  5. We buy them at Walmart. I would use the cheddar and bacon, and I would make something similar to your using the leftover turkey we still have in our fridge.
