After the holidays, we’re busy and tired, and this casserole is exactly what I want for dinner. It’s everything you love about a loaded baked potato (cheddar, bacon, sour cream and green onions) baked together with tender potatoes and leftover turkey. It’s a cozy one-dish meal that uses up leftovers, and the whole family digs in.

Turkey and loaded potato casserole

Tips

  • Cut the potatoes evenly into 3/4-inch cubes so they cook at the same time.
  • Short on time? Use a 30-oz bag of frozen diced hash brown potatoes, thawed, instead of fresh.
  • Use leftover mashed potatoes instead: spread them in the dish, top with the turkey mixture, cheese and bacon, and bake until hot.
  • Add vegetables. Stir in leftover green beans, broccoli, corn or chopped kale.

Make ahead and freezing

Assemble the casserole, cover and refrigerate up to 1 day; add 10 to 15 minutes to the baking time. Baked leftovers freeze well for up to 2 months.

I mainly shop at Target and Walmart. We’re not big turkey eaters, but this would be great for chicken leftovers or Christmas ham too. Of course, my family likes them plain too. Our favorite is scalloped and au gratin, but the loaded casserole and cheesy hashbrowns look good.

I love making stuff like this 🙂 We used to do it a lot more before I discovered I had Celiac’s, so we don’t do packaged meals a lot anymore. My husband’s favorite was with hamburger and corn instead of the turkey. It’s also good for pot pie filling.

Never thought to make these with almond milk. My husband grew up on packaged food like these but I didn’t so I don’t often think of how easy they would be in a pinch. This looks like a great way to use up leftovers post-holiday. I might have to grab some next time I’m at Walmart.
