This past week it got down to 55 degrees in the morning. The afternoons were in the high 70's. Until now I've been ‘faking' fall by burning candles and turning the air down so I can wear socks and sweaters. Another way we fake fall is by making thisĀ Pumpkin Spice Hot Chocolate.
I love hot chocolate so much because there are so many things you can do with it and I really like to experiment. Sometimes I add caramel and others I add chili pepper.
I don't understand people who buy hot chocolate because it is sooooo easy to make and much cheaper. The store brands seem saltier to me too and I'm watching my salt intake.
This is a new recipe I tried this year in my attempt to make everything more ‘pumpkiny' and it turned out quite well and I wanted to share.
Yes, it is super easy to make thisĀ Pumpkin Spice Hot Chocolate.
You will need:
4 tbs pumpkin puree
4 cups whole milk or half n half (we use almond milk because he husband can't do dairy)
4 tbs powdered cocoa
1 tbs pumpkin pie spice
If you like it sweeter you can add sugar. I like to use swerve as a sugar alternative.
Cool whip for topping. (We use a non-dairy option)
Directions: In a small saucepan warm milk on a medium heat. Do not bring to a boil. Whisk in pumpkin puree, spices, and cocoa powder until smooth. Continue cooking 1-2 minutes not letting boil. Pour into two large mugs and top with whipped topping.
