Fat Free Spinach Artichoke Dip

I started a ‘diet' aka change in the way I ate before Christmas. Believe me that was HARD but I'm still going strong and the weight is coming off slowly but surely. I'm a ‘foodie' and I like food! I'm not starving myself at all, actually I'm eating a lot more than I used to.
 
I am a huge fan of dips with crispy chips, crackers or pretzels but when attempting to reduce calories in my diet those are typically a no-no. This Fat Free Spinach Artichoke Dip is a great substitute for the creamy full fat varieties that abound. With a few simple tweaks I was able to recreate a traditional recipe into something that my entire family loves and nobody knows is fat free!
It's very delicious and easy to make too.
FAT FREE SPINACH ARTICHOKE DIP

INGREDIENTS

10oz Frozen Chopped Spinach (thawed and drained

6 Artichoke Hearts Chopped

3 Green Onions Diced

1 Cup Non Fat Greek Yogurt

1 Cup Non Fat Sour Cream

2 Teaspoons Lemon Juice

1 Package Knorr Dry Vegetable Soup Mix

DIRECTIONS

In a large bowl mix together spinach, artichoke hearts and green onions

In a medium bowl mix together yogurt, sour cream and lemon juice and dry soup mix

Then you blend the yogurt mixture into the vegetable mixture stirring it until it is well blended.

Finally you refrigerate for one hour or overnight to allow the  flavors to mesh well.

Serve with crackers, pretzels, bagel crisps or fresh vegetables for dipping.
